Ahhhh, here you have it. Another fabulous recipe similar to many of the recipes I offer in my transformation programs. Pancakes are one of the foods that I was sad about breaking up with when I started contest prepping back in the day. This was until I found a way to make them healthier without tasting like cardboard (common for most protein pancake recipes out there). I posted these beauties on Snapchat, Instagram and Facebook this week and everyone went gaga. Reasonably so as I think we are all ready for the cool weather that is reminiscent of anything pumpkin-y right? 🙂 I like to attempt any new recipe at least 3x before I give it to my goddesses. This ensures that I work out the measurements and I have my taste testers give the thumbs up of approval. These were a happy accident! I usually make this same recipe with low fat cottage cheese instead of pumpkin but the other day when I had everything out to bake, I was all out of cottage cheese. I scoured the pantry and I came across a can of pure pumpkin (NOT pumpkin pie filling) and gave it a whirl. The were amaze balls! Which makes me think that this can probably be done with cooked sweet potato too (experiment coming soon). French Toast….mmmnnn Typically you’ve got bready awesome goodness drenched in milk, eggs…then fried and topped with butter, gooey syrup and powdered sugar. Then you’ve likely also got a gut ache, sugar coma and possibly a little regret from enjoying something that probably isn’t waistline friendly. While I’m all for enjoying some delicious French Toast when it’s worth it (if it’s made with some killer bread and fabulous ingredients), sometimes I want French Toast DAILY. You know how it is when you get on a kick and want to eat something every day!?? Well this is one of those recipes that you can enjoy daily without the massive calorie intake for sure. And you guessed it, this is one of the recipes that we remade from our 10,000 calorie challenge video. Follow along with this video above to see how we did it and make sure to give this recipe a try. It’s pretty damn good 😛 Ingredients: 2 slices of Sprouted Grain Bread (I use Ezekiel brand)  1 scoop of Vanilla UMP Protein Powder (best tasting and I love it) 1/4 cup Unsweetened Vanilla Almond Milk 1 egg 1 egg white Cinnamon Directions: In a bowl mix eggs, Almond Milk, cinnamon and protein Soak each piece of bread in the mixture until it’s all used up Lightly spray a pan or skillet with non-stick spray and heat the pan on low-medium. On our quest to eat 10,000 calories, I strategically planned to have some AMAZING pancakes that I love from Velvet Grill and Creamery. They were incredibly delicious and I knew I had my work cut out for me to try to recreate that deliciousness. Now, these Carrot Cake Protein Pancakes are not nearly as decadent as the ones I had at the restaurant, but they are pretty freaking amazing. I estimated that my breakfast that morning of the 10,000 Calorie challenge was nearly around 2,000 calories (if not more). You can rest assured that these pancakes are no where near that calorically overloaded. I’m pretty obsessed with making protein filled pancakes, muffins, cookies and anything really. Why protein? Single Serving Chocolate Chip Protein Cookie!

Have you had a chance to watch our 10,000 calorie challenge video yet? Well if you haven’t, you MUST!  During our pig-out fest, we tracked everything that we ate and have started to re-create some of those higher fat and calorie meals/foods into healthier alternatives and recipes that I could share with all of you guys. I didn’t realize how fun this process would be. One of the items my daughter Alysha had during the 10,000 calorie challenge was a cookie from FreeBirds. We anticipated that our remake version of that FreeBirds cookie has about HALF of the fat, calories and carbs. Over the years I have had NO luck trying to find a delicious protein cookie recipe so this was a great reason to try to experiment again. More often than not, my dogs end up eating the finished attempts at a protein cookie (minus the chocolate of course) because I can’t even handle the grossness.   Baking with protein can be tricky. I find that baking with straight Whey protein powder is a challenge, often making your baked goods super dry, chalky and terrible tasting. This recipe was made with my fave protein powder UMP. It’s a whey casein blend and not only does it taste delicious it bakes AMAZINGLY! My daughter and I put together this recipe after dissecting a recipe for a regular single serving chocolate chip cookie. I carefully looked at the ingredients and swapped out things like traditional white flour, white sugar, brown sugar, butter, and milk chocolate chips for the ingredients listed below in our re-make recipe.
