Dinner! Yup, you guessed it salad again. Honestly I really don’t tire of salad. I truly enjoy the taste of fresh greens. I opted for this without cheese and dressing. Instead I used salsa which is my typical go-to to get some extra veggies in and avoid super high calorie and fattening dressings. This was pretty yummy!
For those of you just tuning in…I’m here in Florida for my daughters cheer comp and although I’m having a great time, food has been a challenge. Not because I “can’t” have certain things, but because the food here is so processed and unhealthy at the resort we are staying at (Disney’s All Star Resorts). So I’m posting my food log so if you are in the same situation you’d have some ideas! I like a good challenge so let’s see what I can come up with.
