Carrot Cake Breakfast Bars

I’m a HUGE fan of carrot cake flavored anything. So I was excited to find a delicious recipe and make it my own.

Here you can have your cake and eat it too!

You can even experiment with adding some “frosting” by taking 1 TBSP of non-fat Greek Yogurt and mixing in some cinnamon, stevia and maybe even some nutmeg any spreading a thin layer on on of these yummy carrot cake bars.

Ingredients
  • 1cup Oat Flourgrind old fashioned oats then measure 1from there
  • 2scoops UMP Vanilla Protein Powder
  • 2tsp cinnamon
  • 1/2tsp baking soda
  • 1/4tsp salt
  • 1/8tsp allspice
  • 1/8tsp nutmeg
  • 4 egg whites
  • 3/4cup baking Stevia
  • 8oz baby food carrots
  • 4oz Wateroptional depends on batter consistency

Instructions
  1. Preheat oven to 350 degrees.
  2. Mix flour, protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
  3. Mix egg whites, Stevia, baby food carrots and water (optional) in a bowl.
  4. Add wet ingredients to dry ingredients and mix together.
  5. Spray 8x8 glass baking dish with non-stick butter spray.
  6. Pour ingredients into dish.
  7. Bake 20-30 minutes.
