Peanut Butter Cookies (No one will know they’re healthy!)

I love peanut butter.

Let me rephrase that, I am obsessed with peanut butter.

I feel bad for those who are allergic because it’s just pure yumminess. 

Now, I’m not talking just any ol’ peanut butter. It has to be the real stuff. Not the waxy stuff that’s loaded with hydrogenated oils and high fructose corn syrup.

Luckily my daughter loves REAL peanut butter too. Or maybe it’s a bad thing. We go through a jar every 2 weeks 🙂

Anyhow, I was excited to find a KILLER recipe for Peanut Butter Cookies in Helen’s (The Dessert Angel) recipe book.

When bringing desserts to gatherings or parties, I always bring something that will be a healthier alternative to a “regular” version.

Ingredients
  • 1/4 Cup Almond Flour
  • 2Pinches sea salt
  • 1/8Tsp baking soda
  • 1/8Tsp apple cider vinegar
  • 4-5 Pinches Stevia
  • 1/2Tsp cinnamon
  • 1/2 Cup Smooth Peanut Butter
  • 2Tsp Smooth Peanut Butter
  • 1 Egg
  • 1Tsp Pure Vanilla Extract

Recipe Notes

1. Preheat Oven to 375F

2. Combine all wet ingredients and mix well

3. In a separate bowl, combine dry ingredients and mix 

4. Pour wet ingredients into dry ingredients and mix well

5. Drop spoonfuls of the batter on parchment lined cookie sheet and flatten the dough with a fork if you'd like

6. Bake 375F for 12-15 minutes
